Oven Fried Wild Turkey
Breast from wild turkey
milk (approx. 2 C.)
2 C. cup flour
2 tsp. salt
1 tsp. cayenne pepper
2 C. buttermilk
4 C. crushed cornflakes
3 Tbsp. Oil
Soak turkey in milk over night. Slice turkey into two-inch strips. Preheat oven to 350 degrees. Combine flour, salt, and cayenne pepper in a medium-size bowl. Place buttermilk and corn flakes in two separate shallow bowls. Roll turkey in flour mixture and evenly coat each side. Next, dip turkey into buttermilk and then roll in corn flakes crumbs. Brown turkey in oil in skillet for approx. 3 min. on each side. Spray 9x13-inch baking dish with nonstick cooking spray. Place coated turkey in prepared baking dish. Cover with foil and bake for 20 min. Remove foil and bake an additional 10 min. Enjoy! : )
Mark Family Stir Fry
1 lb. wild game steak, cut in bite-size pieces
1 pkg. lo mein noodles (thin spaghetti may be substituted)
1/2 green pepper, sliced
1/2 red pepper, sliced
1/2 onion, sliced
1/2 C. fresh mushrooms, sliced
1/2 C. broccoli, chopped
1/2 C. cauliflower, chopped
1/2 C. water chestnuts
2 Tbsp. sesame oil
4 Tbsp. garlic oil
Ultimate Tailgate Barbecue Rub, to taste
Cook lo mein noodles according to package. Drain noodles, stir in sesame oil, and set aside. Get garlic oil hot in wok or skillet, then add vegetables, stirring and tossing for 3 min. Season meat with Ultimate Tailgate Barbecue Rub, then add to vegetables. Stir for additional 4 min. Serve stir fry over bed of noodles. Enjoy! : )
Old Settlers’ Beans
1 lb. wild ground hamburger
1 lb. wild boar bacon
1/2 lb. wild roast, brisket or any left over meat (cooked and shredded)
1 onion (chopped)
1 can pork and beans
1 can pinto beans (drained)
1 can butter beans (drained)
3/4 cup Ultimate Tailgate Barbecue sauce
1/2 cup brown sugar
salt and pepper to taste
Fry wild boar bacon, break into pieces, and set aside. Saute onion and set aside. Crumble wild hamburger in pot of water and boil for 5 min. until no longer pink. This helps to delete wild game taste. Drain wild hamburger and mix with other wild meats. Mix Ultimate Tailgate Barbecue sauce with brown sugar, then add onion, beans and meats. Bake at 350 degrees for 1 hr. or in crock pot on high for 4 hrs. Enjoy! : )
